Fricasé de Pollo  (Chicken Stew)

Serves 4 to 6


1 whole chicken skin removed and cut up ( or any 4 to 8 of your favorite pieces piece)

1 celery stalk diced

1 carrot diced

3 potatoes, peeled and cubed

1 large spanish onion diced

1 bell pepper, chopped

1 8 oz can tomato sauce

1 14 oz can diced tomato

6 cloves garlic chopped

1 1/2 teaspoons salt

1/2 teaspoon fresh ground black pepper

1 cup of beer

1/3 cup olive oil

1 cup chicken stock

1/2 cup white wine

2 tablespoon of my Adobo mix

1/2 cup green olives

  1. When ready to start dinner, pressure cooker, turn on the heat to medium and add the olive oil. Add the chicken and the Adobo mix.
  2. Cook the chicken for two to three minutes on each side remove and set it aside.
  3. Add all the rest of the ingredients.
  4. Cover the pot and set to to low-medium heat. Cook for 25 minutes.

Serve with white rice and platanos maduro

You may use a pot or a dutch oven and cook on the stove top.  If you are using this method, add another 45 minutes to the cooking time.
