Fricasé de Pollo (Chicken Stew)
Serves 4 to 6
1 whole chicken skin removed and cut up ( or any 4 to 8 of your favorite pieces piece)
1 celery stalk diced
1 carrot diced
3 potatoes, peeled and cubed
1 large spanish onion diced
1 bell pepper, chopped
1 8 oz can tomato sauce
1 14 oz can diced tomato
6 cloves garlic chopped
1 1/2 teaspoons salt
1/2 teaspoon fresh ground black pepper
1 cup of beer
1/3 cup olive oil
1 cup chicken stock
1/2 cup white wine
2 tablespoon of my Adobo mix
1/2 cup green olives
- When ready to start dinner, pressure cooker, turn on the heat to medium and add the olive oil. Add the chicken and the Adobo mix.
- Cook the chicken for two to three minutes on each side remove and set it aside.
- Add all the rest of the ingredients.
- Cover the pot and set to to low-medium heat. Cook for 25 minutes.
Serve with white rice and platanos maduro
You may use a pot or a dutch oven and cook on the stove top. If you are using this method, add another 45 minutes to the cooking time.
