Cuban Bread ( since not available in many places you may substitute with a long semi soft roll or French bread)
1 Dill pickle (cut into thin slices)
1/3 lb. Lechon (Roast pork shoulder) sliced or pulled
1/3 lbs. lean domestic ham, sliced
3 slices Quality Swiss Cheese
If you have a sandwich press turn it on a pre heat it. If you don’t, that’s okay, place a skillet on the stove and place it on low heat.
- Assemble you sandwich, begin by slicing it in half and buttering the inside. Spread the mustard on the top half and set a side. Now, on the bottom half start by placing the roast pork then the ham, and then the swiss cheese. Put the pickle slices over the chesse, close your sandwich and lightly butter the outside of the bread.
- If you are using a sandwich press, place your sandwich in the press and firm press your sandwich. If you are using a skillet, use another skillet to press down your sandwich (my grandmother used to have a brick the she had cover with foil and used that to press down the sandwich. Cover with a lid and cook for 3 to 4 minutes on each side. Keep an eye on your heat to make sure you are not burning the bread.
- Remove your sandwich and cut on the diagonal and serve with potato sticks.
A note: If you do not have roast, you may check with your local deli and see if they have roast port. Some companies sell it as a cold cut. This is only a last resort…but, will still make a nice sandwich.
