Carne con Papas (Cuban Beef Stew)
2 pounds of beef sirloin cut into about 1 1/2 to 2 inch cubes
1/2 cup flour
4 tablespoons olive oil
1 large spanish onion chopped
1 green pepper chopped
2 carrots diced
6 cloves garlic, diced
1 tablespoon of my adobo mix
1 cup of your favorite red wine
1 8 oz. can tomato sauce
1 14 oz can of diced tomatoes
2 tablespoons distilled white vinegar
1/4 cup green olives
1/4 cup capers
1 bay leaf
2 cups beef stock
4 large potatoes, peeled and cut into large cubes
- Place the pressure cooker on the burner and add the olive oil. Roll your beef in the flour and place in to the cooker and brown the meat.
- Add all the ingredients except for the potatoes, cover the pressure cooker and cook for 20 minutes. Shut off and wait until the pressure has reduced and you can open the cooker safely. Open and add the potatoes. Cover the cooker and cook for another 15 minutes.
- Remove from cooker and serve with white rice.
Note: If you do not have a pressure cooker, you may cook it on the stove top in a dutch oven or large pot. Replace the 25 minutes of cooking time in the pressure cooker by 1 1/2 hours at low to medium-low heat on the stove top. Add everything but the potatoes at first. Add the potatoes after one hour.
