Arroz Blanco (White Rice)
Ingredients (will feed 4 people)
2 cups white rice
4 cups water ( I use filtered water because of the heavy chlorine taste in our tap water)
1 tsp salt
2 Garlic clove minced
1 tsp virgin olive oil
Note: My grandmother used to wash the rice before cooking it. I do not wash my rice…today’s rice is vitamin enriched and washing it will wash away a lot of those vitamins.
Place your rice in a covered pot or pan and add the water, salt, garlic and olive oil mix well. Stir while bring the water to a boil. Cover and bring down to low heat and cook for about 18 to 20 minutes. You will know that the rice is done when the water has been absorbed and their are little craters on the surface of the rice. Turn off the heat and let seat an additional 10 minutes before removing the cover. Stir and serve.
